Do you ever finish off your dinner and think, “Wow, I could really use some chocolate right now!” I’ve been there so many times. I don’t want a cookie. I don’t want ice cream. I want some rich, decadent dark chocolate. That’s where this dark chocolate pudding comes in. It’s rich and creamy, but insanely decadent. I had never yearned for pudding in my life until I created this dark chocolate pudding. It’s that good!
But, wait, it gets better. This recipe is made healthier by the addition of avocado! It’s the avocado that gives this pudding it’s wonderful creamy texture. Avocados have lots of good fat and are high in fiber and other nutrients that our bodies need. Tasty dark chocolate pudding with a health food kick – yup, it’s true!
On another note, Phill and I almost always have our celebratory/birthday/anniversary dinners at our favorite Vermont restaurant – The Kitchen Table Bistro. During our very first trip to The Kitchen Table we ordered the bittersweet chocolate pudding for dessert. We were instantly bummed when it came out in the tiniest glass jar we had ever seen. After dipping in our spoons and tasting how rich and decadent that pudding was, we knew why it was served in such small portions. A little was all you needed, and probably all anyone could comfortably handle. Anyway, my dark chocolate pudding reminds me exactly of that evening and our teeny-tiny, uber tasty dessert. I find such satisfaction in creating allergy-friendly versions of old favorites, especially if they’re from fancy restaurants with fancy chefs.
So, put on your slippers, pour a glass of wine, light a candle, curl up on the couch, grab your spoon, and “treat yo’ self” to a decadent dark chocolate-y evening.
**FYI – Let “treat yo’ self” be your mantra for a bit and see how it feels. Too often we get caught up in the stress of life, the ups and downs, that we forget to treat ourselves. We forget to spend some time, money, and thought on ourselves. So, go ahead, treat yo’ self, you deserve it! (Also, any Parks & Recreation fans in the house!? Donna and Tom for the win!)
Dark Chocolate Pudding
2 ripe avocados
1 tbsp. coconut oil
4 tbsp. cocoa powder
3 tbsp. honey
1 tbsp. maple syrup
1 tbsp. dairy-free milk
Add all ingredients to the bowl of a food processor and blend until creamy and thick, about 3 minutes. For those without a food processor, use a high powered blend or hand mixer. This pudding is best served immediately to avoid oxidation of the avocados, which will alter the taste. If oxidation does occur, the taste and scent might change. You can fix this by adding more cocoa powder and maple syrup or honey.
